Vegan Baked Felafel
This healthy take on felafel that we found on
Nutritious Foodie, makes out mouths water. Check out the recipe below and you can have this Middle Eastern treat ready for your next dinner in no time!
INGREDIENTS
1 can Chickpeas, drained and rinsed
1 Shallot or 1/2 small onion
2-3 cloves of Garlic
3 tbps Italian Parsley, chopped
3 tbsp Cilantro, chopped
1 tsp Cumin
1 tsp Coriander
1 tsp Paprika
1/4 tsp Cayenne Pepper
Juice of 1 Lime
1 tbsp Olive oil
2 tbsp Quinoa Flour
DIRECTIONS
In a food processor combine all ingredients except for the chickpeas. Mash the chickpeas in with a fork and fold the well mixed ingredients into the chickpeas. Roll into small balls and place on a baking dish. Bake for 5-8 min under broil @ 500°.
